All across the US, patients of all ages are getting food tested! Why? For several reasons. For starters, we don't like to guess at things. We have a saying in our clinic..."We Don't Guess...We FOOD TEST!"
They say one man's food is another man's poison. It's important to understand that we are all UNIQUE
individuals and we each react to foods differently. And believe it or not, people react negatively to things MOST
would consider healthy (apples, green beans, garlic, eggs, etc.)!
It's almost crucial to understand exactly WHAT we are testing. We are testing the IgG portion of the immune system! This is the DELAYED immune response. We are testing for sensitivities and intolerances...NOT allergies! A food allergy is typically immediate and can sometimes be more serious (i.e. anaphylactic). We don't test immediate reactions because those are typically easy to discover. We test the 10-12 hour...sometimes up to 72 hour delayed immune response. The time frame is simply too much to do any sort of elimination diet which is why we test!
